Panera Thai Chicken Salad

Ingredients

Salad:

  • 2 cups cooked chicken (shredded or grilled)
  • 2 cups romaine lettuce (chopped)
  • 1 cup red cabbage (shredded)
  • 1 carrot (julienned)
  • ½ cup cucumber (sliced)
  • 2 tbsp green onions (chopped)
  • ¼ cup roasted peanuts
  • 1 tbsp sesame seeds

Thai Peanut Dressing:

  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 1–2 tbsp warm water (to thin)

👨‍🍳 Instructions

1️⃣ Prepare the Salad

In a large bowl, combine lettuce, cabbage, carrot, cucumber, and green onions.


2️⃣ Add Chicken

Top the salad with cooked shredded or grilled chicken.


3️⃣ Make the Dressing

In a small bowl, whisk together peanut butter, soy sauce, honey, lime juice, sesame oil, and warm water until smooth.


4️⃣ Toss & Serve

Pour dressing over the salad and toss well.
Top with roasted peanuts and sesame seeds.
