Pumpkin Curry – Rich & Flavorful

Ingredients

  • 2 cups pumpkin (peeled & cubed)
  • 1 tbsp vegetable oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp ginger paste
  • 1–2 green chilies (optional)
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 cup coconut milk or water
  • Salt to taste
  • Fresh coriander for garnish

👨‍🍳 Instructions

1️⃣ Prep & Sauté

  • Heat oil in a pan.
  • Add cumin seeds and let them sizzle.
  • Add chopped onion, garlic, and ginger paste; sauté until golden.

2️⃣ Add Spices

  • Stir in turmeric, coriander powder, and garam masala.
  • Cook for 1–2 minutes until fragrant.

3️⃣ Cook Pumpkin

  • Add pumpkin cubes, mix well with spices.
  • Pour coconut milk (or water) to cover partially.
  • Simmer for 15–20 minutes until pumpkin is soft.

4️⃣ Finish & Serve

  • Mash slightly for a creamy texture or keep chunks.
  • Garnish with fresh coriander.
  • Serve hot with rice, roti, or as a side dish.
