Ramen Chicken Noodle Soup
Ingredients
- 2 cups pumpkin (peeled & cubed)
- 1 tbsp vegetable oil
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 tsp ginger paste
- 1–2 green chilies (optional)
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp garam masala
- 1 cup coconut milk or water
- Salt to taste
- Fresh coriander for garnish
👨🍳 Instructions
1️⃣ Prep & Sauté
- Heat oil in a pan.
- Add cumin seeds and let them sizzle.
- Add chopped onion, garlic, and ginger paste; sauté until golden.
2️⃣ Add Spices
- Stir in turmeric, coriander powder, and garam masala.
- Cook for 1–2 minutes until fragrant.
3️⃣ Cook Pumpkin
- Add pumpkin cubes, mix well with spices.
- Pour coconut milk (or water) to cover partially.
- Simmer for 15–20 minutes until pumpkin is soft.
4️⃣ Finish & Serve
- Mash slightly for a creamy texture or keep chunks.
- Garnish with fresh coriander.
- Serve hot with rice, roti, or as a side dish.
